Ingredients

  • 4 potatoes, peeled and diced
  • 1 cup of frozen peas
  • 2 tablespoons of minced ginger
  • 1 teaspoon of ground cumin
  • 1 teaspoon of ground coriander
  • ½ teaspoon of turmeric
  • 2 tablespoons of vegetable oil
  • 4 tablespoons of plain flour
  • ½ teaspoon of baking powder
  • Salt and pepper to taste
  • Oil for deep-frying

Instructions

  1. Heat the oil in a large pan over a medium-high heat and add the potatoes. Fry for 10 minutes until the potatoes are cooked through.
  2. Add the peas, ginger, cumin, coriander, and turmeric to the pan and cook for a further two minutes.
  3. In a separate bowl, mix together the plain flour, baking powder, and a pinch of salt and pepper. Add the vegetable oil and enough water to form a thick dough.
  4. Divide the dough into eight equal portions and roll into a ball. Flatten each ball into a disc and spoon the potato mixture into the centre. Fold the dough over the mixture and press the edges together to form a crescent shape.
  5. Heat the oil in a large pan to 350°F and deep fry the samosas for 4-5 minutes until golden brown.
  6. Serve the samosas with your favourite dipping sauce. Enjoy!
