Gujiya is a mouth-watering Indian dessert that is loved by all generations. It is a crescent-shaped pastry filled with a sweet mixture of khoya (milk solids), nuts, and dried fruits, flavored with cardamom and saffron. The pastry is then deep-fried or baked to a golden-brown perfection, giving it a crispy texture on the outside and a soft, melt-in-your-mouth filling on the inside. Ingredients:
For the Dough:
- 2 cups all-purpose flour
- 4 tablespoons ghee (clarified butter)
- A pinch of salt
- 1/2 cup lukewarm water
For the Filling:
- 2 cups khoya (milk solids)
- 1 cup powdered sugar
- 1/4 cup chopped mixed nuts (cashews, almonds, and pistachios)
- 1/4 cup chopped dried fruits (raisins and dates)
- 1/2 teaspoon cardamom powder
- A pinch of saffron
For Frying:
- Oil or ghee
Instructions:
To prepare the dough, mix the flour and ghee in a mixing bowl until the mixture resembles breadcrumbs.
Add a pinch of salt and gradually add lukewarm water to make a smooth and pliable dough.
Knead the dough for 5-10 minutes until it becomes soft and smooth.
Cover the dough with a damp cloth and set it aside for 30 minutes.
To prepare the filling, crumble the khoya in a mixing bowl.
Add powdered sugar, mixed nuts, dried fruits, cardamom powder, and saffron. Mix well to combine.
Heat a non-stick pan over medium heat and add the khoya mixture.
Cook for 10-15 minutes, stirring continuously until the mixture turns light brown in color.
Turn off the heat and let the mixture cool.
To make the Gujiya, roll out the dough into thin circles.
Place a tablespoon of the filling in the center of the circle and fold the dough over to make a half-moon shape.
Press the edges of the Gujiya with a fork to seal it.
Repeat the process with the remaining dough and filling.
Heat oil or ghee in a deep frying pan over medium heat.
Once the oil is hot, add the Gujiyas and fry until golden brown.
Remove the Gujiyas with a slotted spoon and drain excess oil on a paper towel.
Let the Gujiyas cool down for a few minutes before serving.
